    The Blue Pig will be opening next weekend! This restaurant used to be located on 50th and Division but has decided to move to The 20 On Hawthorne.     Hello Everyone,  through a little digging I have found out that a company called triplepundit.com has released an artical saying that our building is one of the five best Eco-friendly apartments in the country!     In other news October is coming soon!  Here is a great recipe that’s in season for Butternut Squash Soup.

    Ready In:
1 Hr

    Original Recipe Yield 4 servings

    Ingredients

                2 tablespoons butter

                1 small onion, chopped

                1 stalk celery, chopped

                1 medium carrot, chopped

                2 medium potatoes, cubed

                1 medium butternut squash – peeled, seeded, and cubed

                1 (32 fluid ounce) container chicken stock

                salt and freshly ground black pepper to taste

     

    Directions

         Melt the butter in a large pot, and cook the onion, celery, carrot, potatoes, and squash 5 minutes, or until lightly browned. Pour in enough of the chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 40 minutes, or until all vegetables are tender.

         Transfer the soup to a blender, and blend until smooth. Return to pot, and mix in any remaining stock to attain desired consistency. Season with salt and pepper.

    Hello Everyone, just wanted to let you know of some events coming in the next month. August 26th is the beginning of the Oregon State Fair in Salem Oregon. It’s a long drive but if you have kids or just want to go on rides and eat fairground food then it’s not something to miss. The fair ends on Sept 5th.

     Also going on this weekend is the Hawthorne Street Fair. There will be great food, a diverse variety of  music and tons of sidewalk sales. The street fair is on August 28thand will close down most, if not all of Hawthorne. The Belmont Street Fair is coming on September 10th.

    Every last Friday the Portland Art Museum has free admission 5pm-8pm. The currant exhibit is Allure Of The Automobile. Sixteen of the rarest cars in the world gathered together for a once in a lifetime display. All the cars are privately owned and this is the only time this selection of cars will ever be together. The exhibit was originally at the Louvre in Paris, France and in Atlanta, Georgia, the only other places in the world this exhibit has appeared.
